Healthy food option: Chargrilled Capsicum

 

Ingredients:

  • 2 capsicums

  • 1 tbsp olive or grapeseed oil

  • Sea salt flakes

  • Chilli flakes (optional)

Step-by-step recipe:

  1. Gather the ingredients

  2. Heat a BBQ grill to medium high heat

  3. While the grill is heating up, halve and core the capsicums, removing all membranes and seeds. Then cut the capsicum lengthways into strips.

  4. Brush the skin side of each piece of capsicum with oil. Put the capsicum on the grill skin-side down, cover, and cook until tender (about 10 minutes). The skin should blacken a fair amount, which is fine; it will be quite easy to slip off.

  5. Remove the grilled skin; it should slip more or less right off. Sprinkle the pieces with salt (and/or a sprinkle of chilli flakes) and serve them hot, warm, or at room temperature.
