Cheesy tumeric cauliflower popcorn
Ingredients
1 small cauliflower head (about 800g) cut into bite-size pieces
2 tablespoons olive oil
1/4 cup parmesan cheese (grated)
1 tablespoon almond meal
1 tablespoon tapioca flour (or arrowroot)
1/2 teaspoon turmeric powder
Pinch of sea salt
Method
Set oven to 200 degrees Celsius
Line a large baking tray with baking paper
In a large bowl toss the cauliflower in olive oil, almond meal, tapioca, parmesan and turmeric and sprinkle on sea salt
Pour the cauliflower onto the tray and spread out evenly
Bake for 25 – 30 mins until golden brown and tender
Eat hot!
