Banana, Cashew and Peanut Butter Ice-cream

Ice-cream is a much enjoyed treat on a hot summer’s day. Why not try this healthier twist made from real fruit and nuts? It’s sure to be a hit with the whole family.

Freezing time 4 hours

Ingredients

1 cup raw cashews
¾ cup water
¼ cup peanut butter, no added salt or sugar
¼ cup honey (optional)
2 bananas
½ tsp vanilla essence

Step 1

In a blender, process all ingredients together until thick and creamy

Step 2

Place in a freezer safe container and freeze for at least four hours.
